Each villager in the newer versions of minecraft requires one to be able to do a typically, you can expect to do between two and 16 trades in total before they disable the trade.
Once a trade is disabled, you won't be able to use it. Command summoned traders can refresh their trades automatically after an amount of time set in. Villagers now restock their trades twice a day, and most trades can only be done 4 times. Each villager has 5 levels of trades that unlock progressively higher quality items.
